We are currently looking to recruit an Executive Sous Chef to join our team of culinary professionals at our luxury hotel in Kuchchaveli, Trincomalee. The position provides a key support role in setting new standards for culinary and operational excellence and to achieve the next stage of our continued evolution In order to be successful for this role, you will have a qualification from a recognized hotel school along with 5 years of experience in a similar capacity working in all areas of the kitchen in a 5-star hotel background; supporting the main kitchen operations, and will demonstrate In-depth knowledge of costing, menu planning, and menu creation, strong interpersonal and problem-solving skilled coupled with the ability to work well under pressure in a fast-paced environment.
In this role, you will be responsible for;
- Kitchen functions include food preparation and maintenance of quality standards; sanitation and cleanliness, training of employees in methods of cooking, preparation, plate presentation, portion and cost control, sanitation, and cleanliness.
- Ensuring that all food and products are consistently prepared and served according to the restaurant’s recipes, portioning, cooking, and serving standards.
- Supporting the training of kitchen personnel in the safe operation of all kitchen equipment.
- Training kitchen personnel in cleanliness and sanitation practices.
- Checking and maintaining proper food holding and refrigeration temperature control points.
- Fill in for the Executive Chef, in planning and directing food preparation when necessary.
