Assistant Cost Controller

Job role and responsibilities

1. Assist in monitoring and analyzing food and beverage costs, inventory levels, and overall restaurant operational expenses.
2. Support inventory management processes, including stock control procedures, regular stock audits, and efficient stock rotation to minimize wastage and shrinkage.
3. Coordinate with suppliers and assist in vendor management activities, including procurement negotiations to secure competitive pricing and quality products.
4. Work closely with the culinary team on menu engineering by evaluating recipe costs, portion controls, and pricing strategies to maximize profitability.
5. Prepare and maintain cost reports, variance analyses, operational performance reports, and recommendations for management review.
6. Identify opportunities for process improvements and cost-saving initiatives while ensuring operational excellence and quality standards are maintained.
7. Monitor and help control food and beverage costs, wastage, pilferage, and operational inefficiencies.

Qualifications and competencies required

1. Degree or professional qualification in finance, accounting, hospitality management, or a related field is preferred.
2. Minimum of 2-3 years of experience in a similar role, preferably within the hospitality, restaurant, or food and beverage industry.
3. Strong understanding of food and beverage cost control, inventory management, wastage reduction, and operational efficiency.
4. Excellent analytical, communication, and negotiation skills with the ability to collaborate effectively with suppliers and internal stakeholders.
5. Advanced proficiency in Microsoft Excel; experience with ERP systems will be considered a strong advantage.
6. Willingness and flexibility to work weekends as required.
7. Knowledge of the seafood industry and experience in sourcing seasonal seafood products will be an added advantage.
