Head of Bakery Operations

FLi Trading (Pvt) Ltd is one of Sri Lanka’s fast-growing retail and food service organizations, operating 20 supermarkets, 5 Bake Bars and Super Hot Kitchen outlets across leading cities. We are seeking a dynamic, results-oriented professional to lead our Bakery Operations and drive production efficiency, quality, profitability, and sales growth.

Key responsibilities

1. Oversee the end-to-end operations of the Central Bakery, ensuring smooth production and distribution.
2. Plan, organize, and monitor daily bakery production activities to meet quality and quantity requirements.
3. Drive sales growth and profitability of bakery products across all outlets.
4. Develop and implement production plans, new product initiatives, and operational improvements.
5. Prepare and maintain bills of materials (BOMs), recipes, costing sheets, and production standards.
6. Monitor food quality, hygiene, safety, and compliance with company and regulatory standards.
7. Analyze sales, production, wastage, and inventory data and provide timely management information system (MIS) reports.
8. Optimize manpower, raw materials, and production resources to improve productivity and reduce costs.
9. Coordinate with supermarket, bake bar, purchasing, and logistics teams to ensure uninterrupted operations.
10. Train, supervise, and motivate bakery staff to achieve operational excellence and business targets.
11. Identify market trends and customer preferences to introduce innovative bakery products.

Key requirements

1. Diploma or degree in a relevant field such as food technology, bakery management, hospitality management, or business management.
2. 5 – 7 years of experience in bakery production, food manufacturing, or bakery operations.
3. Strong understanding of bakery processes, food safety, inventory control, costing, and production planning.
4. Experience with BOM preparation, sales analysis, and operational reporting.
5. Proficient in Microsoft Excel and reporting tools.
6. Excellent leadership, analytical, problem-solving, communication, and team management skills.
