Restaurant & bar manager

A well-established members’ club in Dehiwela / Mount Lavinia is seeking a dynamic and disciplined professional to lead and enhance its food & beverage operations.

Key responsibilities

1. Oversee the day-to-day operations of the bar, restaurant and clubhouse to ensure excellence in service and member satisfaction.
2. Take full responsibility for total stocks – procurement, storage, control, reconciliation and loss prevention.
3. Ensure daily sales, cash, POS and inventory reconciliation and alignment with accounting records.
4. Monitor and control food & beverage costs to achieve optimal margins.
5. Work closely with the bar secretary and clubhouse secretary to identify and implement creative ways to reduce and control costs.
6. Handle club-related administrative work including timely renewal of licenses, permits and statutory requirements.
7. Ensure compliance with accounting practices, internal controls, policies and audit requirements.
8. Plan and execute events and promotions while maintaining financial discipline.
9. Manage supplier relationships, purchasing and pricing.
10. Prepare and present regular operational and financial reports to the management committee.

Requirements

1. Minimum 5 years’ experience in a similar role in a club, hotel, or restaurant environment.
2. Strong knowledge of bar operations, inventory management and cost control.
3. Experience in handling administrative functions, licenses and compliance.
4. Good understanding of basic accounting practices and financial reporting.
5. Experience with POS and inventory management systems.
6. Excellent command of English and Sinhala.
7. Proven ability to manage operations with minimal supervision and drive results.
8. High level of integrity, accountability and attention to detail.
9. Strong leadership, communication and interpersonal skills.
10. Ability to work flexible hours including evenings, weekends and public holidays.
